Bobby Stuckey is known for his unique perspective in wine service. At his Boulder restaurant, Pizzeria Locale, in Colorado, he defies typical convention and exclusively serves wine on tap while beer is only served in bottles. This attitude toward food and wine service extends to his other restaurant, Frasca Food and Wine, also in Boulder.

Stuckey has been inspired by a certain type of restaurant in Italy. “A neighborhood restaurant, historically in North Eastern Italy… you’d have a branch, maybe at the end of a driveway or over the front door or next to the door, that kind of denoted ‘hey, come on in,’” Stuckey says. “Whatever we have we’re going to do for you that night, or that day. And that is exactly what a frasca is meant to be.”

Stuckey describes the attitude at Frasca as being atypical compared to the average American restaurant. “In the U.S., we want to raise some capital, build the restaurant, go forward in the first six months and then [motions hand downwards]. Our whole vision with Frasca was every year, every day, try to get a little bit better.”
